White Bean and Turkey Chili
Not just another turkey chili, this recipe uses smokey chili powder and seasonings for a truly unique twist.
Serves: 8
Ingredients:
- 32 oz Turkey or Chicken Broth
- 2 Tbsp Olive Oil
- 1 White Onion, chopped
- 3 Tbsp Tomato Paste
- 2 lbs Ground Turkey Breast (or leftover turkey)
- 1 Tbsp Chipolte Meco Chile Powder
- 2 Tbsp Manzanillo Mexican Seasoning
- 1 Tbsp California Granulated Garlic
- 1 Tbsp Mexican Oregano
- 1 Tbsp Jalapeno Flakes
- 1 tsp Ground Cumin
- 1 tsp Freshly Ground Black Pepper
- 2 15oz cans Great Northern Beans, drained
- 1 15oz can Pinto Beans, drained
- 2 15oz cans Diced Tomatoes, drained
- 1 Lime, juiced
Instructions:
- Heat olive oil over medium heat and saute onions and tomato paste for 2 to 3 minutes.
- Raise heat to medium high and add ground turkey, chipotle meco, all seasonings and spices and mix to combine. Cook for 5 minutes, stirring occasionally.
- Add drained beans, drained tomatoes and turkey broth.
- Heat until almost boiling, then reduce heat to low, cover, and cook for 20 minutes.
- Add salt and pepper to taste if needed, and finish with the juice from 1 lime.
- Chili can be garnished with sour cream, cheddar cheese or queso fresco, cilantro, green onions, tortilla strips, or crackers.
