Tandoori Chicken

Tandoori chicken is a wonderful treat if you are looking for an Indian dish that is easy to make. Marinate overnight and dinner will be ready in a flash.

Serves: 4

Ingredients:

  •  2 lbs Chicken Thighs or Legs (4 chicken leg quarters)
  •  1 Cup Greek Yogurt, plain
  •  1 Lemon, juiced
  •  4 Cloves Garlic, minced
  •  3 Tbsp Extra Virgin Olive Oil
  •  1 Tbsp Tandoori Masala Spice
  •  1 Tbsp Medium Grind Black Pepper

Instructions:

  • Preheat oven to 450 degrees (if not marinating chicken overnight).
  • Rinse chicken and pat dry.
  • Place chicken, greek yogurt, lemon juice, garlic, extra virgin olive oil, Tandoori Masala Spice and black pepper in a bowl.
  • Mix all ingredients well.
  • Cover and refrigerate for 2 hours or as long as overnight.
  • Remove chicken from refrigerator and roast uncovered at 450 degrees for 45 minutes, turning occasionally.
  • Broil chicken for about 5 minutes to crisp skin.
