Cream of Tartar


Tartaric acid is produced by nature from fruit and is commonly obtained as part of the wine making process. The tartar crystallizes in wine casks during the fermentation of grapes. The crystals are purified to produce this acidic powder. The most common use is in the stabilization of egg whites by increasing their heat tolerance and volume.
