Ingredients:

1-16oz pkg tortilla chips
1-15oz can black beans, drained and rinsed
2 C pulled pork (Stonewall Kitchen Pulled Pork Simmer Sauce*)
1 C any salsa*
1 C corn (canned, frozen, fresh)
2/3 cup chopped tomatoes
2/3 cup chopped fresh cilantro
¼ cup sliced scallions
2 thinly sliced jalapeno peppers or Happy Hal’s Jalapenos* (optional)

 

Heat oven to 350.  Layer tortilla chips on a foil or parchment* lined baking sheet*.   Top with black beans and pulled pork, corn, and scallions.  Warm in oven for 10 minutes.  Remove from oven and top with salsa, tomatoes, cilantro and jalapeno peppers.  Serve with homemade queso.  Serves 6-8

Queso:

1 C pepperjack cheese shredded
1 C white American cheese shredded
1 C cream cheese
½ cup full-fat sour cream
1-10oz can tomatoes with green chilies, drained
¾ C whole milk (if needed)
1 tsp garlic powder* (optional)
1 tsp onion powder* (optional)
1 tsp chili powder* (optional)

In a medium pot over low heat combine cheeses, sour cream and tomatoes with chilis.  Let the mixture heat until the cheeses melt, stirring often until a smooth sauce develops.  Add milk to thin if needed. Add optional spices if desired.
