Pulled Pork Nachos with Homemade Queso

1 16oz pkg tortilla chips
1 15oz can black beans, drained and rinsed
2 C pulled pork from slow cooker pulled pork recipe, warmed
1 C refrigerated fresh salsa
1 C corn (canned, frozen (thawed), or fresh)
2/3 C chopped tomatoes
2/3 C chopped fresh cilantro
¼ C sliced scallions
2 thinly sliced jalapeno peppers (optional)

Heat oven to 350. Layer tortilla chips on a foil or parchment lined baking sheet. Top with black beans and pulled pork, corn, and scallions. Warm in oven for 10 minutes. Remove from oven and top with salsa, tomatoes, cilantro and jalapeno peppers. Serve with homemade queso.

Queso:
½ lb. pepperjack cheese
½ lb. white American cheese
8 oz full-fat cream cheese
½ cup full-fat sour cream
1 10 oz can original Rotel tomatoes & green chilies, drained
¾ C whole milk (if needed)
1 tsp garlic powder, optional
1 tsp onion powder, optional
1 tsp chili powder, optional

In a medium pot over low heat combine cheeses, sour cream and Rotel. Let the mixture heat until the cheeses melt, stirring often until a smooth sauce develops. Add milk to thin if needed. Add optional spices if desired.
